Un Zimtstern ou étoile à la cannelle est un cookie de Noël, originaire de Souabe dans le sud-ouest de l’Allemagne
Ingrédients :
3blancs d’oeufs
250gr.de sucre en poudre
2gouttes de jus de citron
140gr.de poudre de noisette
140gr.de poudre d’amande
2cc. de cannelle
2cc. de kirsch
Préparations :
Battre les blancs en neige avec 2 gouttes de jus de citron. Verser doucement le sucre en poudre en continuant de battre et terminer de monter vos blancs à grande vitesse pour obtenir une belle meringue.
Garder environ 100 gr. pour le glaçage.
Ajouter la poudre de noisette, la poudre d’amande, la cannelle et le kirsch.
Mélanger jusqu’à l’obtention d’une pâte homogène.
Abaisser entre deux feuilles de papier sulfurisé, environ 1 cm d’épaisseur.
Dessiner vos étoiles avec un emporte-pièce. Reformer une boule et répéter l’opération jusqu’à ce qu’il ne reste plus de pâte.
Recouvrir avec le glaçage que vous avez gardé.
Laisser reposer les cookies 12h à température ambiante.
Préchauffer le four à 160°C. Enfourner 8 minutes environ. Le biscuit ne doit pas être coloré.
